If the food you prepare and serve as part of your business is ready-to-eat, potentially hazardous (i.e. needs temperature control), and is NOT sold and served in the supplier's original package your business is required to have a trained Food Safety Supervisor. This includes retail food businesses such as restaurants, cafés, takeaway shops, caterers, and bakeries.

The aim of the Food Safety Supervisor is to prevent individuals from becoming ill from food poisoning as a result of incorrect handling and preparation of food. A Food Safety Supervisor can only be appointed to one premise and must have their certificate onsite at all times. If the appointed Food Safety Supervisor is no longer associated with your food premises you will have 21 days to appoint a new Food Safety Supervisor.

Food Safety Supervisor Training

Food Safety Supervisor training will only be recognised if it is delivered by a Registered Training Organisation that has been approved by the NSW Food Authority.
